Light, refreshing and ready with about five minutes of prep, these little set jellies are lovely when your appetite is small but you still want something nourishing.

Collagen Jellies

Orange collagen jellies
MAKES 4
500ml orange juice
200g satsuma segments
200g raspberries
4 gelatine leaves
40g collagen powder

Berry collagen jellies
MAKES 4
500ml fruit juice
400g mixed berries (raspberries, strawberries and blueberries)
4 gelatine leaves
40g collagen powder

M E T H O D

  1. Soak the gelatine leaves in cold water for a minute, then lift them out.

  2. Add them to a saucepan with 100ml of your juice and warm gently, stirring regularly, until the gelatine has dissolved. Take off the heat.

  3. Stir in the collagen powder until it fully dissolves, then mix in the rest of the juice.

  4. Divide your fruit between four ramekins or small glasses.

  5. Pour the collagen juice over the fruit.

  6. Chill for a couple of hours, or overnight, until set.

A little note on collagen: it isn't a complete protein, meaning it doesn’t contain all the amino acids your body needs to build muscle, so make sure you still have a variety of other protein sources throughout the day. Collagen however, is particularly rich in the amino acids that support your own collagen formation and the lining of your gut. Which is great if you’re on a GLP-1 and want to support your skin and digestive health.
